Cooking and Steaming with Hotpan and Durotherm
Caution: Never cook on the highest heat setting (danger of burning)- Wash your ingredients
- Put a little water in the Hotpan or Durotherm (only a little water is needed for Soft Cooking) and fill up to half way with ingredients
- Replace the lid
- Set to a medium heat
- As soon as steam appears (to test: the lid should be able to turn quickly and silently on the pan), set to the lowest heat level and cook for a further 2 - 3 minutes. Do not remove the lid
- Remove the Hotpan or Durotherm from the heat and place in the insulating bowl or on the insulating under-plate.
- Leave for 15 - 30 minutes (according to taste)
Your ingredients will stay hot for up to 2 hours courtesy of the Hotpan or Durotherm.
