Using much less water than traditional cooking, Durotherm cooks gently and the little bit of steam that does rise collects in the groove between the pot and its unique convex lid, forming a seal that keeps heat in and oxygen out, returning moisture of the centre of the pan, so food bastes as it cooks. Vegetables cooked on low heat with their own moisture retain their natural nutrients - they look fresh and colourful, and taste wonderful.
