Mini Apple Pies

Pocket Makers: Serves 5 pockets as a dessert

INGREDIENTS

  • 1 large green apple
  • 1 Tbsp butter
  • 1 Tbsp brown sugar plus 1 tsp
  • 1/4 tsp cinnamon plus 1/8 tsp
  • 1/4 tsp cornflour
  • 1 packet of pre-made pastry of your choice, puff or shortcrust will work best

METHOD

  1. Preheat oven to 200°C
  2. Cut the apple into small dice. 
  3. Melt the butter in a frying pan, add the diced apple and cook until soft, about 3-4 minutes. 
  4. Add the brown sugar, cinnamon and corn flour - stir and cook until thickened.
  5. Roll out the pastry on a floured surface and roughly halve it. Put the larger half aside. 
  6. Using the smaller half gently press the pocket maker onto the pastry to make marks for 5 pockets in one half of the pastry. 
  7. Place about 2Tbsp of the apple mixture in each outline, be sure to keep all ingredients in the middle of the outline.
  8. Brush egg wash* around the edges of the 5 pocket outlines. 
  9. Roll out the other half of the pastry on a floured surface, roll out the second half of dough so it is slightly larger than the first, and place on top of the pastry and the filling. 
  10. Gently press down around each filling.
  11. Place the pocket maker on top and press down firmly to cut through the dough and press down to seal the pocket. 
  12. Remove excess dough and place the 5 pockets on a greased baking sheet.
  13. Repeat the process with any remaining pastry.
  14. Brush evenly with egg wash and sprinkle with the remaining cinnamon and sugar mixed together, before placing in heated oven for 12-15 minutes, or until golden brown. 
  15. Remove and leave to cool before biting into the filled pastry.


*Whisk 1 egg and 1 Tbsp water.
