To be sure you purchase the right size gasket for your Kuhn Rikon Duromatic pressure cooker, first run your finger around the inside of the gasket until you feel some text and the word 'Original', there are 4 digits preceeding the text, these refer to the size of the gasket as follows:- 1657 - 20cm / 1501 - 22cm / 1502 - 24cm / 1719 - 28cm

Place the lid upside down on the pan for storage, so that there is no stress on the ring seal in the lid and all components are well ventilated. You may wish to place a towel between the lid and the pan in order to protect the finish from scratches.

The principle of pressure cooking is really quite simple. A pressure cooker is airtight, so pressure builds up inside the pressure cooker as the liquid inside comes to a boil. The resulting trapped steam causes the internal temperature to rise beyond what it would be capable of doing under normal room pressure. Most foods can be cooked at the higher pressure (2nd red ring on the valve) at 11.6 pounds per square inch (psi). Older recipes may state 15 psi; given the efficiency of modern Duromatic pressure cookers we advise that this is the same as the 2nd red ring on the valve.  Foods that have a tendency to foam such as rice and pulses must be cooked on the first red ring at 5.8 psi. Instruction manuals and recipes will indicate if cooking at lower pressure is preferable.

Immediately after use, remove the gasket and wash the lid by hand thoroughly inside and out. The exposed inside edge of the lid should be given special attention. The gasket should be cleaned, dried and returned to the lid. If the pressure cooker lid is hard to turn when closing, the gasket has become dried out and should be lightly rubbed with cooking oil. All pressure cooker bodies are guaranteed for 10 years. There's a 2 year warranty on all parts subject to wear such as gaskets, handles, valves, valve caps, and internal components. The warranty does not cover damage to the pressure cooker due to overheating, general misuse or commercial use.
